On the Menu: Chocolate Cupcakes with Sour Cream Frosting

Oddly enough, I am one of those "bakers" who would rather have others enjoy the final product than enjoy it myself. Don't get me wrong, I LOVE sweet treats -- cupcakes, cookies, brownies galore, but for some reason when I am the one actually doing the baking I like to have one taste and I'm set (of course there are a fewwwww exceptions!).

So due to the fact that M. and I enjoyed a late lunch this afternoon I knew that crafting a meal wouldn't be all that wise so I opted for a baking adventure instead. Today I tried my hand at cupcakes -- Chocolate
Cupcakes with Chocolate Sour Cream Frosting to be exact. Seems pretty simple, yes, but for some reason I have had issues with cupcakes in the past. Something always seems a little bit off. So I took my time this afternoon and made sure all of my ingredients were measured correctly and that I followed all of the directions justttt right.

I halved the recipe because I knew I wouldn't be eating more than two of these treats and didn't want a bunch of leftovers just in case M. wasn't a fan of my baking. It turned out to be the perfect amount of cupcakes and after making the batter and filling the liners they baked up in a short 17 minutes at 350 degrees.

While the cupcakes were baking I whipped together the frosting. An interesting choice I thought -- Chocolate Sour Cream Frosting? -- the ingredients didn't seem to make sense to me. I mixed together the sour cream, honey and vanilla and in a separate bowl melted the semisweet chocolate chips and dash of espresso powder. I waited for the chocolate to cool and then folded it in to the sour cream mixture. The whole concoction seemed a little thin, so I did exactly what I told myself I wouldn't do -- I added an ingredient. I only added about a cup of confectioners sugar, but it thickened the frosting up just enough. I popped it in the fridge to set a little more while the cupcakes cooled.

The "frosting" really was more of a ganache, but served as the perfect compliment to the moist chocolate cupcakes. I accented each cake with a fresh raspberry which was a delicious addition.

Overall I thought they turned out pretty great and M. liked them too -- they also just look really pretty sitting on a cake pedestal on the counter! :)
