So what was on the menu for Monday?! Well, since we had spent the entire weekend eating pretty much anything and everything in sight…and most of those things happened to be pretty unhealthy, I decided to try out a recipe that was light, but filling…also one that I wasn’t sure M. would go for....risky! :)
Chicken Cashew Lettuce Wraps was the meal of choice. High in protein, low in fat, and super flavorful. It didn’t’ take all that long either – in fact, it was such a short process that I didn’t really take very many pictures. I washed some iceberg lettuce, M. had already pre-diced the chicken (thanks, sweetie!) and I put together the sauce/chopped the cashews, onion and garlic.
Total this meal probably took 20 minutes to make. First I browned the chicken, then after removing the cooked chicken I browned the onions, garlic, and about two teaspoons of soy sauce. When the onions and garlic were nice and tender I added the chicken back to the pan and then added the rest of the sauce – a mixture of sesame oil, soy sauce, rice vinegar, brown sugar and red pepper flakes – and let everything come together and for most of the liquid to cook into the chicken and onion/garlic mixture.
I sat the food down in front of M. and of course I was wondering if he was going to try it out “lettuce” style with the meat wrapped up in the big pieces of iceberg. At first he just had the chicken, but then he went for the full on lettuce wrap...and bonus, he told me he liked it that way!
Overall this meal was delicious and super, super filling without being overly heavy. I always have cravings for Chicken and Cashews (reminds me of my time spent in Thai restaurants in London) and this is the perfect way to satisfy them! I’ll definitely be making this meal again, especially when I need something quick! :)
Now what do I make this Sunday...hmmm?
