Once again this week just FLEW by for me…I hope this happens next week too (fingers crossed)! I’ve already started out today on a happy note because I ended up winning a little business contest going on at work. A little extra moo-lah in my pocket is never a bad thing! :)
I had to share with you all a little surprise last night from M. When he got home he had a little white box sitting on our “kitchen” table. I was excited to see what was inside and when I opened it up – the most adorable little treat – miniature (like REALLY miniature) cupcakes from THIS adorable shop!!! How cute are they?! M. also picked up the beautiful printed menu while he was there. Before our afternoon workout we decided to try just one and I chose the Red Velvet – YUM! Literally one bite, so moist and delicious with the perfect amount of frosting! We will certainly be stopping by this shop again.
We had planned on having chicken last night with roasted carrots and while we were working out I was feeling less then excited about that plan. So instead we started improvising a little bit with what we had in our kitchen and my dinner turned out to be AMAZING.
M. made the chicken and instead of the carrots we were going to have green beans. Then at the last second I decided that instead of green beans I was going to use up the half empty carton of mushrooms we had in the fridge…which turned into me wanting to add a little white wine to the mushrooms while they were sautéing…which turned into me having M. open the bottle of wine for me because the cork was really stuck…which turned into him pulling on the cork so hard that the wine ended up shooting into the air and coating M.’s face and hair and the kitchen floor…which turned into hysterical laughter and photos…which turned into finally adding a little wine to the mushrooms and a little balsamic vinegar too…which turned into me deciding I needed a little bread on the side…which turned into the realization that I could make the most slammin’ sandwich…which turned into the most delicious dinner that I totally wasn’t expecting – Rosemary Olive Oil Bread (toasted with a little butter), perfectly seasoned and grilled chicken, balsamic/white wine mushrooms and a good slather of Dijon Mustard sandwich. Yum. (Oops...already took a bite before this photo!) Don't you love when dinners just come together like this at the last minute?! To top it off we ate those delicious miniature cupcakes for dessert. My favorite flavor of the bunch? Probably the S’mores cupcake, but even though I’m not the biggest fan of Red Velvet cupcakes…I really liked theirs! Perfect dinner.
Not quite sure what’s on tap for this weekend, but I am really looking forward to some major relaxing time! :)
Also, keep your fingers crossed for my little sister today – she was flown in (to a city I will not name, but not in NYC though, boo!) for an interview for a big internship this summer! If you see this C., GOOD LUCK and I LOVE YOU! :)
