Being "Sweet" On Vegetables

It can sometimes be a struggle to eat healthy – we all know this and we’ve all experienced those times where we simply fall off the bandwagon and indulge a little too much. I try my best to keep my “unhealthy” eating to the weekends and even then, amongst all of the sweets that I like to consume (who knew I had such a sweet tooth!?) I try to balance them with things that are healthy.

It’s clear that meal planning is an easy way to avoid the late-afternoon, “What should we have for dinner?….Oh let’s just order takeout” moments. So I typically plan out our meals on Sunday morning and then Sunday afternoon M. and I head to the store to pick up any necessary ingredients. We’ve been working hard to incorporate more fruits and veggies into our diets rather than fill our meals with items that don’t fuel our bodies. Obviously we have our weaknesses. Mine usually comes in the form of a bag of Stacy’s Pita Chips (Simply Natural) and on the weekends it usually means onion rings (the best fried goodness), while M. is more of a cookie fan….but of course I always need to test the cookies before he eats them…you know, to make sure they’re not poisoned or anything. :)

I’m always trying to find items to liven up our everyday meals and vegetables can often do the trick. I've always wondered about SWEET POTATOES. I love sweet potato fries (HA!) so I’m sure that it would be the perfect thing to add into our meal rotation as a side dish. I will love having a sweet potato with my dinner, right?! I found this fabulous piece in Real Simple magazine which highlights some of the interesting ways you can prepare a sweet potato.

On my next trip to the grocery store I am definitely going to pick some of these puppies up and use this nifty guide to think of different ways to prepare them. At my old job one of my coworkers would have a sweet potato every single day for lunch…she’d just pop it in the microwave. Do any of you have any great, healthy ideas for preparing/enjoying sweet potatoes?! I’d love some suggestions of your favorites…and unfortunately marshmallows aren’t going to make the cut! :)
